Recipe:

Sweet potato curry

Ingredients:


3 Cups of kidney beans
2 medium sweet potatoes
1 red onion
1 can of coconut milk
1 tbsp turmeric
1 tbsp hot curry powder
1 tbsp chilli powder
1 tbsp garlic powder
Thyme
Pink salt to taste
Water for preferred consistency
Scotch bonnet 

I boiled the kidney beans in some water until 85% done. I kept the water because I'm using the red colour for the curry.

I chopped everything and added the spices/herbs and onions to a pot with some oil. I then added the coconut water followed by the chopped sweet potato. When it was pretty soft, I then added the kidney beans with the water. This gave it a deeper colour and I'm using those nutrients 😋 I then added the Thyme and scotch bonnet and let it simmer until done 🙏🏿

For the salad, I just added some olive oil and a little sea salt.
