Recipe:

CURRY

Ingredients:

1 onion

4 garlic cloves

1 tbsp turmeric powder

1/2 tbsp smoked paprika

1/2 tbsp onion powder

1 tbsp garam masala

2 tbsp curry poweder

400g coconut milk

sea salt to taste

260g chickpeas

bay leaves

1 tin plum tomato

Cameroon pepper/scotch bonnet

soy sauce

1 tbsp dark soy sauce

1 plantain

4 diced tomatoes

I love this dish as its a one pot dish and requires minimal effort.

1. Slice and chop the onions and garlic into a pan on a medium heat.

2. Add all of the season into the pan with some oil and mix and until everything is well incorperated.

3. Add the honey beans followed by enough water to cover the beans (soaked), stock cube and leave for around 20 minutes.

4. Add the pasatta and chopped tomatoes.

5. Service this with rice, plantain, boiled yam and avocado. Enjoy! 🌱
